Not trivial.

The way I do it is using the character fusioner plugin, but I don't do it often, so it's hard to make a step by step guide.

From what I can recall, you save the look you want the head as an appearance preset, then load the look you want the body in a scene, load the character fusioner plugin, add a minimal amount value of the appearance with the head you want, then the morph you want will show up in the female morph tab. Set the unwanted head morph to zero and the wanted head morph to 1.

In other words, the look will have:
Unwanted Head morph > 1
Wanted Body morph > 1

When you add .01 value from the other look, it will be like this

Unwanted Head morph > 1
Wanted Body morph > 1
Wanted Head morph > .01
Unwanted Body morph > .01

Then you remove the unwanted stuff

Unwanted Head morph > 0
Wanted Body morph > 1
Wanted Head morph > 1
Unwanted Body morph > 0

It doesn't always work. Sometimes the neck will just collapse into the sternum, Idk why. So you can try other plugins, like the mass morph merger.
I just go into the morphs of the model I want to edit. Say I want [model name]'s body but I want a different head I go into the female morphs tab and turn off the head morph. A lot of creators merge the model's morphs for the body, head, and genitals into 3 separate morph sliders, and are typically labeled "[model name]-body/head/gens". Setting one of the morph sliders to 0 should bring the body, head, or genitals to their default state (i.e the default body/head/gens). Then you can just swap in the morph you want to use. You might have to make some minor adjustments though. I've never had the neck collapsing issue before.

like something to show me how to create a character and how to put said character I created in a scene

Creating a scene from the ground up would be very challenging for a beginner of VaM.
Iam working on a scene for like 6 months now and its still a mess, but almost shareable.

There is some addon called "VamX" which has alot of automated stuff you can set up your own scenes fairly easy with.
It's still limited but you can get some ideas and maybe inspirations on how you want to craft your very own stuff in the future.
Haven't tested the latest versions but I remember there is a tutorial scene which should explain alot.
You could also check YT.

And you can just use a premade scene, change the characters add or alter plugins and save it as a new scene.
But if you got clue on whatsoever, give VamX a chance.
I personally don't use it anymore because it lacks of variaty but its perfect for starters if you want to get the hang of it.
It even had AI chat which was limited to a daily or weekly changing password but it was kinda funny to try out without hosting AI next to VaM and melt my PC :KEK:
Dunno if the AI chat is still a thing, this was a year ago or so.

Yeah, I use that plugin a lot! I love it! I was just explaining that swapping out morphs from different models isn't super technical. I see it like character sliders in a RPG game, but there's just tons of them.

Ok is there a step by step guide on how to install this? Downloaded the torrent form the first page, updated it via the updater in the file and it gave me an error. after that the program itself was bugged and not working. Is there a link to a stable version etc?

installer is here . click install button (will install in the same folder). For desktop run the file VaM (Desktop Mode).bat. Maybe you ran vam.exe and you have no VR?

Is it possible to make big games like Being A DIK, Milfy City etc. with only using VaM?
No. You can create scenes in VAM that feel a lot like a game. But if you want to capture screenshots or videos to make big games low-effort visual novels, you'd need to use Python or some other tool to build a separate application for that.
